F&W's Justin Chapple reveals a foolproof way to form perfectly round burger patties.
[MUSIC] I'm Justin Chapel from Food & Wine's test kitchen. Join me as I demonstrate mad genius tips. [MUSIC] The perfect burger is juicy and it's tender. But what a lot of people don't realize is that in order to get the perfect burger, you have to have the perfect patty. And most people, they overwork the patties, and that causes it to be tough and dry. But we don't want that. So, I have a mad genius tip that's gonna solve the problem. So today I wanna four patties, so I bought a little over a pound of meat, and I very gently Broken into four large pieces. The secret to this mad genius tip are these simple take out container lids. So, you're going to start with your first piece of meat and you're going to lay it right on top of your first take out container lid just like that. And, you can see it's kind of rough, it looks rugged. But, when you take the second lid and you place it on top [MUSIC] And you press down gently, and you turn the lid. The meat starts to spread, and what you're doing is you're forming a perfect circle. And when you remove the top lid, you're left with what is the perfect burger patty, just like that. And I'm going to make more. Holy moly, look at that. I mean it took me ten seconds. Can you believe it? And because it was between the two lids, we weren't overworking it. Our warm hands weren't pressing on the meat. And you're gonna end up with this super juicy and super tender burger. [MUSIC] [BLANK_AUDIO]
