[MUSIC] I'm Justin Chapple from Food & Wine's Test Kitchen. Join me as I demonstrate Mad Genius Tips. [MUSIC] Today I have another Mad Genius Tip. This one is for removing the seeds From vegetables like zucchini, a summer squash, or a cucumber, or an eggplant. The first thing we're gonna do is just cut off the two ends of the zucchini. Then you're gonna cut the zucchini in half crosswise because [INAUDIBLE] This as you can see here we have the core of the zucchini. That is full of liquid and seeds that sometimes can be bitter removing it will get rid of those not so great aspects of the zucchini and actually this core is going to be your guide. You are going to hold it upright and you are going to look just to the side of the core and you are going to make one even cut all the way down. You're gonna do the same thing on the other side. I know I said it's genius, but it's so simple folks. All the way down, and one more time. Look at that, I very easily, and very delicately removed the core of my zucchini. After deseeding the zucchini, you're left with these nice flat pieces that is easy to cut, and you can make it pretty and beautiful for your salad, or if you're gonna cook it, roast it. Whatever it is that you prefer. [music]
